When you are visiting Kubota, you best dress up formally and look nice.

The inner structure and the waiter/waitress outfits are organized to welcome the customers with the most respect and comfort.

To impress someone with a fashionable and excellent restaurant, Kuboto would be the perfect choice.

There are many dishes on the menu, and you can even go up to the sushi bar and have the chef make sushi right in front of you!

This restaurant has great food and service. The decor is nice although the restaurant itself can get a little cramped. One incident I was seated so close to another couple I felt as if I was in on their date with them. Talk about awkward. I would recommend a reservation for busy nights, especially if you're with a large party. This place is a little more upscale than your average Japanese restaurant, the prices also reflect that. They don't offer too many sushi rolls however they actually have their own full bar - not just sake/beer. Definitely a good place for special dinners - dates, etc. I also love how this restaurant has it's own parking lot. I would definitely come back.

One time this was my favored restaurant. The business has picked up somewhat and the restaurant becomes very arrogant. The service is horrible. If you like to eat out while taking some abuse, this is the Japanese restaurant for you.

I am only writing reviews for a calamari salad and sushi we ordered. The calamari salad was good, decent proportion for the price. Sushi was good, fresh. But they have traditional japanese sushi only, mainly nigiri and not very many rolls. Do not expect to see all those rolls that you would see at Americanized Japanese Restaurants. We visited the restaurant on a Tuesday night at around 7 pm, and we were seated right away. However, it can be crowded very quickly after 7:30 pm, even on week nights.

  • Pros: Ambience, Fresh sushi
  • Cons: High price, proportion

i have been going to this place for some time and the past two times have been getting worse and worse in terms of their service and food. the servers take forever to take your order and then seem like they forget to put in the sushi order b/c all the other food gets to the table (after a much longer wait than used to ~30 min or more) and then we had to cancel the sushi since most of the other entrees were already eaten up before any sushi came out! overall, this place is going down quickly in my book.

  • Pros: ambience, food on a good nite
  • Cons: service slow, less quality recently

it is a little more pricey for about $20 a plate, but worth every penny. the food is very fresh and very good. thinking about it is making my mouth water.

Kabuto is tucked away in San Jose's Japantown. I was truly impressed with the authenticity of the place. The service was great and so were the servers and bussers. The pricing is a bit high but well worth such a unique menu and selection. I do not eat sushi/sashimi, so I can not rate that. However, the fish I had was absolutely wonderful and tasty. Went again for a birthday and they were prompt about seating, though it was a little tight in spacing. Reservations for large parties highly recommended. My friend who order the chicken did not seem as satisfied, but everything else was a hit!

  • Pros: diverse menu, good quality, great parking

The Scene
Kubota gracefully blends traditional touches like the black bamboo plants growing in the entryway with the modern, serpentine-shaped sushi bar. The atmosphere is casual, drawing a comfortable mix of local families and hip high-tech workers. The service is attentive and well-versed with the menu.

The Food
Compared to other top-notch Japanese restaurants, the menu is somewhat limited--but everything on it is worth ordering. You won't go wrong with the raw fish. The spicy tuna rolls delivers an intense fiery kick. The yellowtail is so buttery and tender that it melts on your tongue like ice cream on a hot day. For those who favor cooked delicacies, the ebi tempura roll achieves an artful balance with its mix of barbecued eel and crisply battered shrimp. Or try the ton katsu, a dense piece of breaded pork cutlet served with sweet ponzu sauce.
